You’ve probably seen those frozen versions at the store-but once you try this easy, from-scratch version, you’ll never go back. They’re crispier, cheesier, and way healthier than anything in a box.

Ingredients
  

  • 1 premade rectangular pizza dough sheet like Pillsbury
  • All-purpose flour for dusting
  • 6 oz sliced deli ham
  • 1 cup shredded cheddar or Swiss cheese
  • 4 strips cooked bacon chopped
  • 2 scrambled eggs
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 12 –15 pepperoni slices
  • 2 tbsp pizza sauce optional
  • 1 egg for egg wash
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Roll out the dough into a 16×14-inch rectangle. Cut it in half lengthwise, then divide each half into three equal sections for six rectangles total.
  • Add your fillings to the lower half of each rectangle, leaving space on the sides for sealing. Choose your flavor: ham & cheese, bacon egg & cheese, or pepperoni pizza.
  • Fold the dough over the filling and press the edges down firmly. Use a fork to crimp and seal the sides.
  • Brush the tops with a beaten egg to give them a golden, crispy finish.
  • Bake in the oven for 10–12 minutes, checking at 8 minutes. They should be golden brown and crisp on the outside.
  • Let cool slightly before serving. Enjoy the warmth!

Notes

Store cooled hot pockets in an airtight container in the fridge for up to 4 days. To reheat, pop them in the oven or air fryer at 350°F for 5–6 minutes for the best texture.
