Ingredients
  

  • cup white or regular balsamic vinegar
  • 6 pitted medjool dates
  • 2 tsp Dijon mustard
  • ¾ cup avocado oil
  • ¼ cup water
  • ½ – 1 tsp sea salt adjust to taste

Instructions
 

  • Add all the ingredients to a high-powered blender and blend on high until the dressing is completely smooth. This should take about 30-60 seconds depending on the power of your blender.
  • Give it a quick taste and adjust as needed! If you prefer a thinner consistency, add a splash of water. Need more tang? Add a little extra balsamic vinegar.
  • Pour the vinaigrette into a mason jar or airtight container and store it in the fridge. It will stay fresh for up to 5 days—just shake well before using!
