Ingredients
  

  • ½ cup tahini paste
  • cup lemon juice
  • 2 garlic cloves crushed
  • ¼ teaspoon salt
  • ¼ –½ cup water depending on desired consistency

  • In a medium-sized bowl, add the tahini paste, lemon juice, crushed garlic, and salt. Use a whisk or fork to combine until the mixture begins to thicken. For an ultra-smooth texture, blend everything in a small food processor or blender, stopping occasionally to scrape down the sides.
  • After mixing for a couple of minutes, the sauce will thicken into a smooth paste. Slowly pour in water, a little at a time, while whisking continuously. Adjust the water quantity depending on how thick or thin you prefer your dressing.
  • Give your dressing a taste test. If you want it zestier, add a touch more lemon juice. If it needs more balance, sprinkle in a bit of salt. Keep adjusting until the flavor is just right.
