Ingredients
  

  • 1 cup black beans canned or cooked
  • 1 medium bell pepper diced
  • 1 small onion diced
  • 2 garlic cloves minced
  • 2 tbsp. olive oil
  • 2 whole wheat tortillas
  • ¼ cup salsa your favorite variety
  • Salt and pepper to taste

Instructions
 

  • Dice the bell peppers and onions, and mince the garlic. Rinse and drain the black beans if using canned ones.
  • Heat olive oil in a non-stick pan over medium heat. Add the diced onions and bell peppers. Sauté for 5–7 minutes until they soften and turn golden brown.
  • Toss in the minced garlic and sauté for 1–2 minutes until fragrant. Next, add the black beans. Sprinkle a pinch of salt and pepper to taste, and stir everything together. Let the mixture simmer on low heat for about 5 minutes.
  • While your filling is simmering, warm up the tortillas. You can use a tortilla warmer, microwave, or a dry pan over medium heat.
  • Lay a warm tortilla flat on a plate. Spread a generous layer of salsa in the center. Spoon the veggie and black bean mix onto the tortilla.

Notes

To store, wrap the burritos tightly in foil or plastic wrap and place them in an airtight container. Refrigerate for up to 3 days or freeze for up to 2 months.
To reheat, microwave refrigerated burritos for 1–2 minutes or until warmed through. For frozen burritos, thaw overnight in the fridge and heat in the oven at 180°C (350°F) for 10–15 minutes for a crispy texture.
