Ingredients
  

  • 1 package Trader Joe’s branzino fillets about 4 fillets
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2-3 tablespoons olive oil
  • 8 fresh rosemary sprigs
  • 1 large lemon sliced

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Prepare the fish by placing the branzino fillets on the prepared baking sheet, ensuring they don’t overlap.
  • Season generously with kosher salt, using about 1/8 teaspoon per fillet. Sprinkle black pepper evenly over each piece. Drizzle olive oil over each fillet, using approximately 1/2 teaspoon per piece.
  • Add aromatics by placing 2 rosemary sprigs on each fillet, then top with 2 lemon slices per piece. Bake for 12-15 minutes until the fish flakes easily with a fork and reaches an internal temperature of 145°F.
  • Make the caper butter while fish cooks by mixing softened butter with chopped capers in a small bowl. Plate and finish by transferring cooked fish to serving plates, removing lemon slices and rosemary, then spreading caper butter on top and squeezing fresh lemon juice over each fillet.

Store leftover branzino in the refrigerator for up to 2 days in an airtight container. Reheat gently in a 300°F oven for 5-7 minutes or enjoy cold in salads. For best texture and flavor, consume within 24 hours as fish is most delicious when freshly prepared.
