  • ¼ teaspoon pepper
  • A dash of nutmeg
  • 3 to 4 slices Swiss cheese or shredded Swiss cheese

Instructions
 

  • Start by melting butter in your saucepan over medium heat. Once melted, add the flour and stir to create a roux. Cook for about 1–2 minutes, allowing it to bubble. If using whole wheat flour, rely on its nutty aroma rather than color changes as it won’t darken like white flour.
  • Slowly pour in the milk while continuously stirring. This step might feel like a juggling act, but take it slow to avoid lumps.
  • Adjust the amount of milk based on the desired consistency. You’re looking for a smooth sauce that thickens enough to coat the back of your spoon.
  • Add salt, pepper, and a dash of nutmeg to the sauce. Stir well to incorporate. Taste and adjust seasoning as needed.
  • Reduce the heat to low and lay the Swiss cheese on top of the sauce. Stir until melted and fully combined. For extra cheesiness, add an additional slice or two. If the sauce becomes too thick, thin it with a few tablespoons of milk.
