15ouncesMexicorn or Southwestern-style corndrained
1ouncedry ranch dressing mixabout 2 tablespoons
1cupshredded cheddar cheese
Extra corncheese, and diced tomatoes for topping
Instructions
In a large mixing bowl, combine 16 ounces of sour cream with the drained diced tomatoes and green chiles.
Add the drained Mexicorn and the dry ranch dressing mix.
Fold in the shredded cheddar cheese until everything is fully combined.
If you’d like, reserve 1–2 tablespoons of corn, cheese, and tomato to sprinkle on top for garnish.
Serve immediately or chill for 30 minutes to allow the flavors to blend even more. Pair with tortilla chips, pita chips, crackers, or sliced veggies.
