Ingredients
  

  • 16 ounces sour cream
  • 10 ounces diced tomatoes with green chiles drained
  • 15 ounces Mexicorn or Southwestern-style corn drained
  • 1 ounce dry ranch dressing mix about 2 tablespoons
  • 1 cup shredded cheddar cheese
  • Extra corn cheese, and diced tomatoes for topping

Instructions
 

  • In a large mixing bowl, combine 16 ounces of sour cream with the drained diced tomatoes and green chiles.
  • Add the drained Mexicorn and the dry ranch dressing mix.
  • Fold in the shredded cheddar cheese until everything is fully combined.
  • If you’d like, reserve 1–2 tablespoons of corn, cheese, and tomato to sprinkle on top for garnish.
  • Serve immediately or chill for 30 minutes to allow the flavors to blend even more. Pair with tortilla chips, pita chips, crackers, or sliced veggies.
