Ingredients
  

  • 3 to 6 medium potatoes
  • ½ stick of butter
  • 1 cup shredded cheddar cheese
  • cup scallions chopped
  • 12 tablespoons heavy cream
  • Salt and pepper to taste

Instructions
 

  • Pierce each potato with a fork. Sprinkle with salt and wrap in a damp paper towel. Microwave for 10-15 minutes until they are firm but cooked. Let them cool until they are easy to handle, then slice them into rounds.
  • Preheat your oven to 375°F. Brush the muffin pan molds with melted butter. Place a slice of potato in each mold, followed by a pinch of salt and pepper, then a layer of cheese and scallions. Repeat this layering process twice more.
  • Drizzle 1 tablespoon of heavy cream over each potato stack.
  • Bake for 25-30 minutes or until the cheese is melted and the potatoes are golden brown on top. Let them cool for a few minutes before serving.
